Steam Whistle is Canada’s premier pilsner – and we’re thrilled to have it at Doc Magilligan’s. Not only do we love their beer, but – in true Irish fashion - we also love their story.

As fate would have it, Steam Whistle rose from the ashes of another fallen brewery. Three friends, Greg Taylor, Cam Heaps and Greg Cromwell found themselves jobless after the micro-brewery where they worked was bought out and closed down. During a canoe trip in Ontario's heartland, the self proclaimed 'Three Fired Guys' bantered about one day running their own brewery.

Their goal was to brew a pilsner that would stand out in the world market. Their enthusiasm was contagious and they soon attracted investors. Steam Whistle was born and the rest, as they say, is history - a smooth, refreshing history.

Steam Whistle is made in ordnance with the Bavarian Purity Act, which was written in 1516. This treaty states that only 4 ingredients should be used when brewing:

  1. Malted barley
  2. Spring water
  3. Hops
  4. Yeast

While Food Canada states that a beer can have up to 100 ingredients, Steam Whistle has founded its success with just these four. Steam Whistle is also GMO free and every single Steam Whistle product - from bottles to packaging - can be recycled. 

So what’s a pilsner?

Pilsners originated in Plen, Czechoslovakia in 1842. An innovative brewery decided to abandon the traditional brewing method, which used top-fermenting yeast to make beer. Instead, they used a technique that involved methodical bottom fermenting with a new kind of yeast. Unlike dark and hazy top-fermented beers, this new method yielded a golden lager with a great balance of malt and bitterness. Steam Whistle has stayed true to this original brewing technique and have definitely earned their slogan:

"Do one thing really, really well."

Steam Whistle's name is inspired by the iconic sound of a steam whistle, which used to signify the end of the work day and time for personal relaxation and reward, like enjoying a cool beer. We couldn’t agree more. Steam Whistle is best paired with grilled meats, spicy international cuisine, fish and comfort foods - making it a perfect pick when dining at Docs.
